    Vegan Soft-Baked Snickerdoodle Cookies - makes 12
    1 and 1/4 cup almond flour
    1 tbsp coconut flour
    1/4 cup coconut sugar
    2 tsp cinnamon
    1 tsp baking powder
    1/2 tsp baking soda
    1/8 tsp sea salt
    1 flax egg (1 tbsp flax meal + 2.5 tbsp water)
    1/2 cup drippy cashew butter or almond butter
    2 tbsp coconut oil melted and cooled
    1/4 cup + 1 tbsp almond milk
    For sprinkling: 1 tsp cinnamon + 1 tbsp coconut sugar
    .
    Preheat oven to 325F and line a cookie sheet with parchment paper.
    In a small dish, mix your flax meal and water to create the flax egg and set aside for 10 min.
    In a mixing bowl add in your coconut oil, cashew butter, and almond milk and whisk with a fork. Add in flax egg.
    Add in your flours, cinnamon, sea salt, baking powder and baking soda and mix to form your dough.
    Using a spoon or mashed potato scoop (handy!), add your dough to the cookie sheet and pat down with your hand so theyโ€™re about 1/4 inch high. Sprinkle your mix of cinnamon-sugar on to each cookie.
    Bake for 13 min! |
